Make Your Own Penne Pasta

Get ready to embark on a delicious adventure through the heart of Italy's Emilia-Romagna region.  We'll be making Penne alla Romagnola, a dish bursting with tradition and flavor.

In this hands-on class, you will learn how to make Penne pasta with little ridges.  The exact name of this type of pasta is called Garganelli.  The pasta will be made completely from scratch, exploring both the traditional hand method and using pasta machines.

The traditional Romagnola sauce for is a simple yet flavorful Ragu made with sausage, tomatoes, and white wine. This rustic dish reflects the rich agricultural heritage of the region, where tomatoes, pork, and wine have been staples for centuries.  Your Chef Instructor will demo how to make the sauce from scratch, giving you tips and tricks for making the sauce on your own at home.  Once the sauce is ready we will cook our pasta and sit down to a delicious plate made completely from scratch.  As an added bonus, your instructor is providing a delicious homemade Panna Cotta dessert for you to enjoy at the end of your meal.  So come on out, have fun, and learn the art of making penne pasta from scratch just like Nonna!

No experience is required! We provide all the equipment and ingredients, which are easy to find at local markets if you don’t already have them in your home kitchen. This class is designed to be just as fun for the cooking enthusiast who wants to be a part of every step as it is for the first-timer who’s happier observing and assisting (or taste testing).

Guests in the same booking party will work together throughout the class.  Please arrive 15 minutes early to check in. Drinks are available for purchase from the venue and are NOT included in the ticket price. Outside drinks are not allowed. 21+ only.

Tommaso was co-owner of the Italian restaurant TANTI BACI in NYC, before spending time in Peru to learn about Amazonian produce and agricultural practice. It was in Peru that he started the tomato sauce brand DUE AMICI, which is still being sold in Lima today. After moving back to NYC, Tommaso opened PROPRIO COSI, a company that will serve “on the go” organic food, with ingredients from local farms and businesses. He’s also the producer of the literary podcast FICTIONZ, a bimonthly series of premium narrative podcasts based on award-winning short stories and novels.

Guest requirement

Class will take place on the Terrace of the hotel.  This is an indoor space with a fun bar.  The nature of our classes are set up so that booking parties will work together during class, sharing both ingredients and equipment.  Drinks are NOT included in the ticket price, but will be available for sale at the venue.  Outside drinks are not allowed. 21+ only.   For any guests booked individually, if you are part of a larger group please email hello@cocusocial.com at least 48 hours prior to your class to confirm your full booking party size and the names of the others in your group.

Cancellation policy
Reschedule request have to be made at least 48 hours before the class for groups of less than 6 people and 14 days for groups of 6 people or more. Cancellations are not permitted and tickets are non-refundable.See terms and policy.

We had such an amazing time with Chef Tommaso! He had such a positive attitude and explained the instructions to everyone thoroughly, checking up on each group to make sure we were making the best garganelli. A lovely way to spend the afternoon learning a new skill and eating a great dish - we definitely recommend this class!
