Pici Pasta with Cacio e Pepe

Pici cacio e pepe is a simple yet technically challenging dish with roots in ancient Roman pastoral traditions. Originating from the shepherds of the Roman countryside, cacio e pepe was a practical and nourishing meal made with readily available ingredients: dried pasta (often pici), aged Pecorino Romano cheese, and black pepper. The dish's simplicity belies the skill required to create its signature creamy sauce, a delicate emulsion of cheese, pepper, and starchy pasta water.

In this fun and hands-on class, we will explore the process of hand-rolling pici pasta, emphasizing the importance of achieving the ideal texture and chew, while also delving into the nuances of creating the emulsified sauce, focusing on the precise balance of ingredients.  Once you have created your masterpiece, you will then plate, garnish and devour your creations with your fellow foodies joining you for this delicious cooking party! You will gain insight on how to source fresh, seasonal ingredients and specialty spices in order to recreate the perfect Italian date night at home.  As an added bonus, your instructor is providing a delicious homemade Panna Cotta dessert for you to enjoy at the end of your meal.

No experience is required! We provide all the equipment and ingredients, which are easy to find at local markets if you do not already have them in your home kitchen. Our events are casual and meant to be fun and instructive, not hardcore. This class is designed to be just as fun for the cooking enthusiast who wants to be a part of every step as it is for the first-timer who is happier observing and assisting (or taste testing).

Guests in the same booking party will work together throughout the class.  Please arrive 15 minutes early to check in. Drinks are available for purchase from the venue and are NOT included in the ticket price. Outside drinks are not allowed. 21+ only.

Tommaso was co-owner of the Italian restaurant TANTI BACI in NYC, before spending time in Peru to learn about Amazonian produce and agricultural practice. It was in Peru that he started the tomato sauce brand DUE AMICI, which is still being sold in Lima today. After moving back to NYC, Tommaso opened PROPRIO COSI, a company that will serve “on the go” organic food, with ingredients from local farms and businesses. He’s also the producer of the literary podcast FICTIONZ, a bimonthly series of premium narrative podcasts based on award-winning short stories and novels.

Class will take place on the Terrace of the hotel. This is an indoor space with a fun bar. The nature of our classes are set up so that booking parties will work together during class, sharing both ingredients and equipment. Drinks are NOT included in the ticket price, but will be available for sale at the venue. Outside drinks are not allowed. 21+ only.  For any guests booked individually, if you are part of a larger group please email hello@cocusocial.com at least 48 hours prior to your class to confirm your full booking party size and the names of the others in your group.

Cancellation policy
Reschedule request have to be made at least 48 hours before the class for groups of less than 6 people and 14 days for groups of 6 people or more. Cancellations are not permitted and tickets are non-refundable.See terms and policy.
