This was my first class with Chef Diego. It was held in his home. He made us felt welcome. There were 3 other people that came beside me. One lady came and celebrated her birthday while a girlfriend came with her boyfriend. She treated him to the cooking class as a birthday gift. Chef Diego served us an appetizer which was easy to make with cut up bread with tomato sauce and herbs. Next he showed us the proper way to use a knife and how to cut an onion without crying. He showed us the right kind of pan to use for our paella. He explained what is fresh seafood to use and to toss out any mussels or clams that does not open. These items would be dead and would harmful to us if we ate them. The paella was delicious and it was enough for 2 persons meal. Chef Diego made us dessert and we celebrated the birthdays of the participants. It was a fun evening and I would take more cooking classes with Diego in the future.
